Strawberry ShortcakeIngredients:
For the Shortcakes:
1 1/2 cups all-purpose flour 1/2 cup granulated sugar 2 teaspoons baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup (1 stick) unsalted butter, cold and cut into cubes 1 large egg 1/2 cup milkFor the Strawberries:
1 pound fresh strawberries, hulled and halved 1/2 cup granulated sugarFor the Whipped Cream:
1 cup heavy whipping cream 1/4 cup granulated sugar 1 teaspoon vanilla extractInstructions:
For the Shortcakes:
1.
Preheat oven to 450 degrees F (230 degrees C).
Line a baking sheet with parchment paper.
2.
In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
3.
Add the butter cubes and use a pastry cutter or two knives to cut them into the flour mixture until it resembles coarse crumbs.
4.
In a small bowl, whisk together the egg and milk.
5.
Add the wet ingredients to the dry ingredients and stir until just combined.
Do not overmix.
6.
Turn the dough out onto a lightly floured surface and knead a few times until it comes together.
7.
Pat the dough into a circle about 1/2 inch thick.
Cut out 6-8 shortcakes using a 3-inch biscuit cutter.

Place the shortcakes on the prepared baking sheet and bake for 12-15 minutes, or until golden brown and cooked through.
9.
Transfer the shortcakes to a wire rack to cool completely.
For the Strawberries:
1.
In a medium bowl, combine the strawberries and granulated sugar.
Toss to coat.

Let the strawberries macerate for at least 30 minutes, or up to overnight.
For the Whipped Cream:
1.
In a medium bowl, whip the heavy whipping cream until stiff peaks form.
2.
Add the granulated sugar and vanilla extract and beat until combined.
To Assemble the Shortcakes:
1.
Split the shortcakes in half.
2.
Place the bottom half of a shortcake on a plate.
3.
Top with a generous spoonful of macerated strawberries.
4.
Add a dollop of whipped cream.
5.
Place the top half of the shortcake on top.
6.
Repeat layers with the remaining shortcakes and ingredients.
7.
Serve immediately and enjoy!
