Homemade Mac and CheeseIngredients:
8 ounces elbow macaroni 1/4 cup (1/2 stick) unsalted butter, divided 1/4 cup all-purpose flour 3 cups milk 1 teaspoon salt 1/2 teaspoon black pepper 1 cup shredded cheddar cheese 1/2 cup shredded mozzarella cheese (optional) 1/4 cup panko breadcrumbs (optional)Instructions:

Preheat oven to 350°F (175°C).

Cook macaroni according to package directions.
Drain and set aside.

In a large saucepan, melt 2 tablespoons of butter over medium heat.
Whisk in flour and cook for 1 minute.

Gradually whisk in milk until smooth.
Bring to a simmer and cook, stirring constantly, until sauce has thickened, about 5 minutes.

Stir in salt, pepper, cheddar cheese, and mozzarella cheese, if desired.

Transfer macaroni to a greased 9×13 inch baking dish.
Pour sauce over macaroni and stir to combine.

In a small bowl, mix together remaining 2 tablespoons of butter and panko breadcrumbs.
Sprinkle over macaroni and cheese.

Bake for 20-25 minutes, or until bubbly and browned on top.

Let stand for 5 minutes before serving.
Tips:
For a creamier sauce, use heavy cream instead of milk.
Add cooked bacon, diced ham, or peas to the macaroni before baking for extra flavor.
If you don’t have panko breadcrumbs, you can use crushed Ritz crackers or cornflakes.
This mac and cheese can be made ahead of time and reheated in the oven or microwave when ready to serve.
