Homemade Mac and CheeseIngredients:
1 pound elbow macaroni 4 tablespoons unsalted butter 4 tablespoons all-purpose flour 3 cups milk, warmed 1/2 cup grated sharp cheddar cheese 1/2 cup grated Monterey Jack cheese 1/4 teaspoon ground black pepper 1/4 teaspoon saltInstructions:

Preheat oven to 350°F (175°C).

Cook pasta according to package directions.
Drain and set aside.

In a large saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute.

Gradually whisk in warmed milk until sauce thickens.
Remove from heat and stir in cheddar cheese, Monterey Jack cheese, black pepper, and salt.

Add cooked pasta to the sauce and stir to combine.

Pour the mac and cheese mixture into a 9×13 inch baking dish.
Bake for 20-25 minutes, or until bubbly and browned on top.
Tips:
For a richer flavor, use a higher quality cheese or a combination of different cheeses.
Add chopped vegetables, such as broccoli, cauliflower, or peas, to the mac and cheese for extra nutrition.
Top the mac and cheese with bread crumbs or grated Parmesan cheese before baking for a crispy crust.
If the sauce is too thick, add more milk 1/4 cup at a time.
If it’s too thin, add more flour 1 tablespoon at a time.
Serve with a side of salad or vegetables for a complete meal.
