Homemade Pizza with Roasted VegetablesIngredients:
For the Dough:

Make the Dough:
1.
In a large bowl, dissolve the yeast in the warm water with the sugar.
Let stand for 5 minutes, until foamy.

Add the flour, olive oil, and salt to the bowl.
Stir until a dough forms.
3.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
4.
Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
Roast the Vegetables:
1.
Preheat oven to 400°F (200°C).

In a baking sheet, combine the bell pepper, zucchini, and red onion.

Drizzle with olive oil and season with salt and pepper.

Roast in the oven for 20-25 minutes, or until tender and slightly browned.
Make the Sauce:

In a saucepan, combine the diced tomatoes, tomato paste, water, oregano, basil, and granulated garlic.
