Honey Garlic ChickenIngredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1/2 cup honey 1/4 cup soy sauce 1/4 cup rice vinegar 2 tablespoons cornstarch 1 teaspoon sesame oil 1 teaspoon freshly grated ginger 2 cloves garlic, minced 1/2 onion, thinly sliced 1 tablespoon vegetable oil 1/4 cup chopped fresh cilantro (optional)Instructions:

In a medium bowl, whisk together the honey, soy sauce, rice vinegar, cornstarch, sesame oil, ginger, and garlic.

Add the chicken pieces to the marinade and stir to coat evenly.
Cover and refrigerate for at least 30 minutes or up to overnight.

Heat the vegetable oil in a large skillet over medium heat.
Add the onion and cook until softened, about 5 minutes.

Push the onion to the sides of the skillet and add the chicken pieces.
Cook until browned on all sides, about 5-7 minutes.

Pour the reserved marinade into the skillet and stir to combine.
Bring to a boil, then reduce heat and simmer until the chicken is cooked through and the sauce thickens, about 5-7 minutes.

Remove from heat and sprinkle with cilantro, if desired.
Serve immediately over rice or noodles.
