Honey Garlic Chicken Stir-FryIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1/2 cup cornstarch 4 tablespoons honey 4 tablespoons soy sauce 2 tablespoons rice vinegar 2 tablespoons water 2 tablespoons vegetable oil 1 small onion, chopped 1 red bell pepper, chopped 1 green bell pepper, chopped 3 cloves garlic, minced 1 inch fresh ginger, peeled and minced 1/4 cup chopped fresh cilantroInstructions:

In a large bowl, combine the chicken with the cornstarch and toss to coat evenly.

In a small bowl, whisk together the honey, soy sauce, rice vinegar, and water.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the skillet.

Add the onion, bell peppers, garlic, and ginger to the skillet and cook until softened, about 5 minutes.

Return the chicken to the skillet and stir in the honey glaze.

Cook until the chicken is cooked through and the glaze has thickened, about 2-3 minutes.

Remove from heat and stir in the cilantro.

Serve over rice or noodles.
Tips:
For a more spicy stir-fry, add a chopped chili pepper to the vegetables.
If you don’t have rice vinegar, you can substitute white wine vinegar or apple cider vinegar.
To make the stir-fry ahead of time, cook the chicken and vegetables as directed, but do not stir in the glaze.
Let cool completely, then refrigerate in separate containers.
When ready to serve, reheat the chicken and vegetables in the skillet, then stir in the glaze.
