Ingredients:
2 tablespoons olive oil 1 onion, chopped 2 cloves garlic, minced 4 cups chicken or vegetable broth 2 (14.
5 ounce) cans diced tomatoes (undrained) 1/2 cup heavy cream 1/4 cup fresh basil, chopped Salt and pepper to tasteInstructions:

Heat olive oil in a large pot over medium heat.

Add onion and garlic and sauté until softened, about 5 minutes.
3.
Add chicken or vegetable broth and bring to a boil.
4.
Add diced tomatoes and reduce heat to low.
Simmer for 15 minutes, or until tomatoes are soft.

Use an immersion blender or transfer soup to a regular blender and puree until smooth.
6.
Stir in heavy cream and basil.
7.
Season with salt and pepper to taste.
8.
Serve warm with crusty bread or crackers.
Tips:
For a richer flavor, use fire-roasted tomatoes.
Add a pinch of red pepper flakes for a touch of heat.
Garnish with a dollop of sour cream or grated Parmesan cheese.
