1 whole chicken (3-4 pounds) 2 tablespoons olive oil 3 lemons, zested and juiced 1 tablespoon minced garlic 1 tablespoon chopped fresh rosemary 1 tablespoon chopped fresh thyme 1 tablespoon chopped fresh oregano Salt and black pepper to tasteInstructions:

Preheat oven to 400°F (200°C).

Pat the chicken dry with paper towels.

In a small bowl, whisk together the olive oil, lemon zest, lemon juice, garlic, rosemary, thyme, oregano, salt, and pepper.

Tips:
For a crispy skin, rub the chicken with a mixture of baking powder and salt before roasting.
If you don’t have fresh herbs, you can use 1 teaspoon of dried herbs instead.
