Easy One-Pot PastaIngredients:
1 pound dried pasta (any shape) 8 cups chicken or vegetable broth 1 tablespoon olive oil 1 medium onion, chopped 2 cloves garlic, minced 1 (15 ounce) can diced tomatoes, undrained 1 (15 ounce) can black beans, rinsed and drained 1 (15 ounce) can corn, drained 1 (10 ounce) can diced green chiles, undrained 1 teaspoon chili powder 1/2 teaspoon cumin 1/4 teaspoon salt 1/4 teaspoon black pepper 1 cup shredded cheddar cheese (optional) Fresh cilantro for garnish (optional)Instructions:

Add the pasta, broth, olive oil, onion, and garlic to a large pot.
Bring to a boil over high heat.

Reduce heat to medium-low and simmer until the pasta is al dente (tender but still has a slight crunch), about 12-15 minutes.

Stir in the diced tomatoes, black beans, corn, green chiles, chili powder, cumin, salt, and black pepper.

Bring to a simmer and cook until the vegetables are heated through, about 5 minutes.

If desired, sprinkle with shredded cheddar cheese and garnish with fresh cilantro before serving.
Tips:
Use any type of pasta you have on hand, such as penne, macaroni, or spaghetti.
For a creamier sauce, add 1/2 cup of milk or cream to the pot along with the broth.
Customize the recipe by adding other vegetables you enjoy, such as chopped bell peppers, zucchini, or mushrooms.
Top with additional toppings such as sour cream, salsa, or guacamole.
