To make the dough:

Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until it becomes smooth and elastic.

Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
To roast the vegetables:

Preheat oven to 450°F (230°C).

In a large bowl, combine the zucchini, bell pepper, squash, garlic, olive oil, salt, and pepper.

Toss to coat and spread the vegetables on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
To assemble the pizza:

Preheat oven to 500°F (260°C).
