Homemade Pizza with Roasted VegetablesIngredients:
For the Dough:
1 1/2 cups warm water (110-115°F) 1 teaspoon active dry yeast 1 teaspoon sugar 2 teaspoons salt 3 cups all-purpose flourFor the Toppings:
1 medium eggplant, cut into 1-inch cubes 1 medium zucchini, cut into 1-inch cubes 1 red bell pepper, cut into 1-inch cubes 1 yellow bell pepper, cut into 1-inch cubes 1/2 cup red onion, thinly sliced 2 cloves garlic, minced 1 tablespoon olive oil Salt and pepper to tasteFor the Pizza Sauce:
1 (28-ounce) can diced tomatoes 1/2 cup tomato paste 1/4 cup chopped fresh basil 1/4 teaspoon dried oregano Salt and pepper to tasteFor the Cheese:
1 (12-ounce) ball fresh mozzarella cheese, grated 1/2 cup grated Parmesan cheeseInstructions:
Make the Dough:

In a large bowl, combine the warm water, yeast, and sugar.
Let stand for 5 minutes, or until the yeast is foamy.

Stir in the salt and flour until a dough forms.
3.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
4.
Place the dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
Roast the Vegetables:
1.
Preheat oven to 400°F (200°C).

In a large bowl, combine the eggplant, zucchini, bell peppers, red onion, garlic, olive oil, salt, and pepper.
Toss to coat.

Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
Make the Pizza Sauce:
1.
In a medium saucepan, combine the diced tomatoes, tomato paste, basil, oregano, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the sauce has thickened.
Assemble the Pizza:

Punch down the dough and divide it in half.

Roll out each half into a 12-inch circle.

Spread the pizza sauce evenly over the dough.

Top with the roasted vegetables, mozzarella cheese, and Parmesan cheese.

Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Serve and Enjoy:
Remove the pizza from the oven and let rest for a few minutes before slicing and serving.
Serve with additional grated Parmesan cheese, fresh basil, and your favorite dipping sauces.
