Chicken and Broccoli AlfredoIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon olive oil 1/2 cup chopped onion 2 cloves garlic, minced 1/2 cup all-purpose flour 3 cups whole milk 1 cup grated Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon black pepper 1 head of broccoli, cut into florets 1/4 cup grated mozzarella cheeseInstructions:

Heat olive oil in a large skillet over medium heat.

Add chicken and cook until browned on both sides.
Remove from skillet and set aside.

Add onion and garlic to the same skillet and cook until softened.

Add flour and cook for 1 minute, stirring constantly.
5.
Gradually whisk in milk until smooth.
6.
Bring to a simmer and cook until thickened, about 5 minutes.
7.
Stir in Parmesan cheese, salt, and pepper.
8.
Add broccoli and cook until tender-crisp, about 5 minutes.
9.
Return chicken to the skillet and heat through.
10.
Sprinkle with mozzarella cheese and serve over pasta or rice.
