Chicken and Broccoli Stir-FryIngredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces 1 head of broccoli, cut into florets 1 cup sliced carrots 1 cup chopped onion 1 cup chopped red bell pepper 1/2 cup low-sodium soy sauce 1/4 cup brown sugar 2 tablespoons sesame oil 1 tablespoon rice vinegar 1 tablespoon cornstarch 1/4 cup waterInstructions:

In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and cornstarch.
Set aside.

Heat a large skillet or wok over medium-high heat.

Add the chicken and cook until browned on all sides, about 4-5 minutes.

Add the broccoli, carrots, onion, and bell pepper to the skillet.

Stir-fry for 2-3 minutes, until the vegetables begin to soften.

Pour the reserved sauce into the skillet and cook, stirring constantly, until it thickens and bubbles, about 1 minute.

Add the water and continue to cook until the sauce has thickened and coats the chicken and vegetables.

Serve immediately over rice or noodles.
Tips:
For a spicier flavor, add a teaspoon of chili flakes to the sauce.
You can also add other vegetables to the stir-fry, such as snap peas, green beans, or mushrooms.
If you don’t have sesame oil, you can substitute olive oil or vegetable oil.
Serve the stir-fry with a side of steamed rice or noodles to soak up all the delicious sauce.
