1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon olive oil 1/2 onion, chopped 2 cloves garlic, minced 1 (15 ounce) can diced tomatoes, undrained 1/2 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

Preheat oven to 375 degrees F (190 degrees C).

Heat olive oil in a large skillet over medium heat.
Add chicken and cook until browned on all sides.

Add onion and garlic to the skillet and cook for 2 minutes, or until softened.

Stir in diced tomatoes and bring to a simmer.

In a separate bowl, combine heavy cream, Parmesan cheese, and basil.
Stir well.

Pour cream mixture into the skillet and stir to combine.
Season with salt and pepper to taste.

Transfer mixture to an 8×8 inch baking dish.

Bake for 20-25 minutes, or until chicken is cooked through and sauce is bubbly.
