Easy Chicken BiryaniIngredients:

5 cups basmati rice 3 boneless, skinless chicken breasts, cubed 1 onion, chopped 1 carrot, peeled and diced 1 bell pepper, diced 1 tomato, chopped 1 teaspoon minced garlic 1 teaspoon minced ginger 1 teaspoon turmeric powder 1 teaspoon garam masala 1/2 teaspoon coriander powder 1/4 teaspoon cumin seeds 1/4 teaspoon black pepper 1/2 teaspoon salt 1 cup plain yogurt 1/2 cup vegetable broth 1/4 cup ghee (clarified butter) or olive oil 1 tablespoon fresh cilantro, choppedInstructions:

Rinse the rice in cold water several times until the water runs clear.
Drain and set aside.

In a large skillet, heat the ghee or oil over medium heat.
Add the chicken and cook until browned on all sides.
Remove from the skillet and set aside.

Add the onion, carrot, bell pepper, tomato, garlic, and ginger to the skillet.
Cook, stirring frequently, until the vegetables are softened about 5 minutes.

Stir in the turmeric, garam masala, coriander, cumin, black pepper, and salt.
Cook for 30 seconds, stirring constantly.

Add the yogurt and vegetable broth to the skillet.
Bring to a simmer.

Return the chicken to the skillet and stir to combine.

Add the drained rice on top of the chicken and vegetables.
Do not stir.

Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and all the liquid has been absorbed.
9.
Fluff the rice with a fork and sprinkle with cilantro before serving.
