Tuscan Sausage and Kale MinestroneIngredients:
For the Minestrone:
1 tablespoon olive oil 1 onion, chopped 2 carrots, chopped 2 celery stalks, chopped 2 cloves garlic, minced 1 pound Italian sausage links (such as Tuscan or sweet Italian) 1 (15-ounce) can diced tomatoes with their juices 4 cups chicken broth or vegetable broth 1 pound kale, stems removed and leaves coarsely chopped 1 (15-ounce) can cannellini beans, rinsed and drained 1/2 cup grated Parmesan cheeseFor the Sausage Topping:
4 slices bacon, cooked and crumbled 1/2 pound Italian sausage links (same type as used in the minestrone), sliced 1/2 onion, finely chopped 1/4 cup chopped fresh parsleyInstructions:

Sauté the aromatics:
Heat the olive oil in a large Dutch oven or pot over medium heat.
Add the onion, carrots, celery, and garlic and cook until softened, about 5 minutes.

Brown the sausage:
Add the sausage links to the pot and cook until browned on all sides, about 5 minutes.
Remove the sausage from the pot and set aside.

Add the broth and tomatoes:
Add the chicken broth or vegetable broth and diced tomatoes to the pot.
Bring to a boil.
4.
Simmer the vegetables:
Add the chopped kale and cannellini beans to the broth.
Reduce heat to low and gently simmer for 15-20 minutes, or until the kale has wilted and the vegetables are tender.
5.
Shred the sausage:
While the vegetables are simmering, shred the reserved sausage links into bite-sized pieces.
6.
Prepare the sausage topping:
In a skillet, cook the bacon until crispy.
Remove the bacon from the skillet and set aside.
Add the sliced sausage to the same skillet and cook until browned on all sides.
Add the chopped onion and cook until softened.
Stir in the chopped parsley.
7.
Assemble the minestrone:
Add the shredded sausage and sausage topping to the pot of minestrone.
Stir to combine.
8.
Simmer until thickened:
Simmer the minestrone for an additional 10-15 minutes, or until it has thickened slightly.
9.
Serve:
Ladle the minestrone into bowls and top with grated Parmesan cheese.
Tips:
For a richer flavor, use homemade chicken broth or vegetable broth.
If you can’t find Tuscan or sweet Italian sausage links, you can use mild Italian sausage links.
You can add other vegetables to the minestrone, such as potatoes, green beans, or zucchini.
Serve the minestrone with crusty bread for dipping.
