Shepherd’s PieIngredients:
1 tablespoon olive oil 1 pound ground lamb or beef 1 onion, chopped 2 carrots, chopped 2 celery stalks, chopped 2 cloves garlic, minced 1 tablespoon tomato paste 1 cup beef broth 1 teaspoon Worcestershire sauce 1 teaspoon dried thyme 1/2 teaspoon dried oregano Salt and pepper to taste Mashed potatoes (for topping) 1/4 cup grated Parmesan cheese (optional)Instructions:

Preheat oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat.

Add ground lamb or beef and cook until browned.

Add onion, carrots, celery, and garlic to the skillet and cook until softened, about 5 minutes.

Stir in tomato paste, beef broth, Worcestershire sauce, thyme, oregano, salt, and pepper.
6.
Bring to a simmer and cook for 15-20 minutes, or until the sauce has thickened.
7.
Spread the meat mixture into a 9×13 inch baking dish.

Top with mashed potatoes.

Sprinkle with Parmesan cheese, if desired.

Bake for 30 minutes, or until the potatoes are golden brown and bubbly.
Variations:
Use ground turkey or pork instead of lamb or beef.
Add 1/2 cup frozen peas or corn to the meat mixture.
Top with a layer of sweet potato mash or cauliflower mash for a different flavor and texture.
Sprinkle with chopped fresh herbs before serving.
