INGREDIENTS:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 tablespoon olive oil 1 teaspoon salt 1/2 teaspoon black pepper 1 large onion, chopped 2 cloves garlic, minced 1 (15 ounce) can black beans, drained and rinsed 1 (15 ounce) can corn, drained 1 (10 ounce) can diced tomatoes with green chiles, undrained 1 teaspoon ground cumin 1/2 teaspoon dried oregano 1/4 cup chopped fresh cilantro 1/4 cup grated cheddar cheese (optional)INSTRUCTIONS:

In a large skillet, heat olive oil over medium heat.

Season chicken with salt and pepper and add to the skillet.
Cook until browned on all sides.

Add onion and garlic to the skillet and cook until softened, about 5 minutes.
4.
Stir in black beans, corn, tomatoes, cumin, and oregano.
Bring to a simmer and cook for 15 minutes, or until chicken is cooked through.
5.
Stir in cilantro and cheddar cheese (if using).
Serve over rice or with tortillas.
