Spaghetti alla CarbonaraIngredients:
1 pound spaghetti noodles 1/2 pound pancetta or bacon, diced 3 large eggs 1/2 cup freshly grated Parmesan cheese 1/4 cup freshly grated Pecorino Romano cheese Black pepper to tasteInstructions:

In a large skillet, cook the pancetta over medium heat until crispy.
Remove from the skillet and set aside.

Bring a large pot of salted water to a boil and cook the spaghetti noodles according to the package directions.
3.
In a large bowl, whisk together the eggs, Parmesan cheese, Pecorino Romano cheese, and black pepper.
4.
When the spaghetti is al dente, drain the noodles and add them to the bowl with the egg mixture.
5.
Add the crispy pancetta to the bowl and toss to coat.
6.
Serve immediately, topped with additional Parmesan cheese if desired.
