Tuscan Kale SaladIngredients:
1 bunch curly kale, washed, de-stemmed, and coarsely chopped 1/2 cup red onion, thinly sliced 1/2 cup sun-dried tomatoes (not oil-packed), thinly sliced 1/2 cup grated Parmesan cheese 1/4 cup olive oil 2 tablespoons lemon juice 2 cloves garlic, minced 1/4 teaspoon dried oregano Salt and pepper to tasteInstructions:

In a large bowl, combine the kale, red onion, sun-dried tomatoes, and Parmesan cheese.

In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.

Pour the dressing over the kale mixture and toss to coat.
4.
Massage the kale with your hands for about 1 minute, or until it becomes tender.
5.
Serve immediately or refrigerate for later.
Tips:
For a more crisp salad, do not massage the kale.
Add other vegetables to the salad, such as shredded carrots, sliced celery, or diced bell peppers.
Top the salad with grilled chicken, roasted chickpeas, or toasted nuts.
Drizzle with additional olive oil or balsamic vinegar for extra flavor.
