Tuscan Sausage and Kale SaladIngredients:
1 pound Tuscan sausage, casings removed 1 head of kale, roughly chopped 1/2 cup olive oil 1/4 cup balsamic vinegar 1/4 cup chopped red onion 1/4 cup grated Parmesan cheese 2 tablespoons chopped fresh parsley Salt and pepper to tasteInstructions:

Cook the sausage in a skillet over medium heat until browned and cooked through.
Drain on paper towels.

In a large bowl, combine the kale, olive oil, and balsamic vinegar.
Massage until the kale is wilted.

Add the cooked sausage, red onion, Parmesan cheese, and parsley to the kale mixture.

Season with salt and pepper to taste.
Toss to combine.

Tips:
For a vegetarian option, substitute crumbled tofu or tempeh for the sausage.
Add other vegetables to the salad, such as chopped carrots, celery, or bell peppers.
Top the salad with a drizzle of olive oil and a sprinkle of crumbled goat cheese.
