Creamy Pesto Pasta with Sun-Dried TomatoesIngredients:
1 pound dry penne pasta 1/4 cup olive oil 1/2 onion, chopped 2 cloves garlic, minced 1 cup chopped sun-dried tomatoes 1 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup fresh basil leaves, chopped Salt and pepper to tasteInstructions:

Cook the pasta according to the package directions, drain, and set aside.

In a large saucepan over medium heat, heat the olive oil.
3.
Add the onion and cook until softened, about 5 minutes.

Add the garlic and sun-dried tomatoes and cook for 1 minute more.

Pour in the heavy cream and bring to a simmer.
6.
Add the Parmesan cheese and stir until melted.
7.
Season with salt and pepper to taste.
8.
Add the cooked pasta to the sauce and stir to combine.
9.
Stir in the fresh basil leaves.
10.
Serve immediately garnished with additional Parmesan cheese, if desired.
