Easy Chicken Stir-FryIngredients:
1 boneless, skinless chicken breast, cut into bite-sized pieces 1/2 cup broccoli florets 1/2 cup shredded carrots 1/4 cup chopped bell pepper (any color) 1/4 cup chopped onion 1 tablespoon soy sauce 1 tablespoon honey 1 teaspoon sesame oil Salt and pepper to tasteInstructions:

Heat a large skillet or wok over medium-high heat.

Add the chicken and cook until browned on all sides.
3.
Add the broccoli, carrots, bell pepper, and onion to the skillet.
Stir-fry for 3-4 minutes, or until the vegetables are starting to soften.

In a small bowl, whisk together the soy sauce, honey, and sesame oil.

Add the sauce mixture to the skillet and bring to a simmer.
6.
Season with salt and pepper to taste.

Cook for an additional 2-3 minutes, or until the chicken is cooked through.

Serve over rice or noodles, if desired.
Tips:
For a vegetarian stir-fry, omit the chicken and use tofu instead.
Add other vegetables to your stir-fry, such as snap peas, snow peas, or zucchini.
If you don’t have soy sauce, you can substitute tamari or coconut aminos.
Serve the stir-fry with your favorite side dishes, such as rice, noodles, or spring rolls.
